Nana Pantone鈥檚 Swiss Chard Patties

Last Fall Chef David Pantone of Lincoln Culinary Institute in West Palm Beach, FL was invited to prepare his Swiss chard dish live on WPTV.
鈥淢y mother used to walk outside and pick fresh chard from her garden,鈥 Chef Pantone says. 鈥淲ithin a few minutes all of her sons would be eating these patties hot out of the skillet. I鈥檓 not sure if any ever made it to a plate! This recipe is a big hit with kids, I hope you enjoy my mother鈥檚 recipe as much as we did!鈥
Swiss Chard Patties
Ingredients:
2 Cups Swiss Chard
1 cup bread crumbs
录 cup Parmesan cheese
1 egg, lightly beaten
Salt and Pepper to taste
Olive oil to for cooking
Directions:
Clean, chop, and blanche chard. Drain and squeeze out excess water.
Place in a mixing bowl. Add bread crumbs, cheese, egg, salt and pepper and mix thoroughly.
Taste for seasoning.
Shape into 3鈥 patties, about 陆鈥 thick.
Panfry in a little oil until lightly golden.
*Serve with either sour cream, hot sauce or warm apple sauce!
