• Making breads, cookies, éclairs, and pies from scratch
• Baking both traditional and modern cakes using proven culinary techniques
• Creating centerpieces from chocolate, truffles and candy
• Sugar and chocolate artistry
• Food service operation and management
• The artistry of creating with sugar and chocolate
• Distinguishing wines by grape and variety
• The science of nutrition
